The compost HAS to be both suitable for mushroom growth (they're very picky) and also incredibly sterile (the same things that promotes good mushroom growth also promote bacterial and mold growth). I remember accidentally touching one of my shitaki cakes (a big wad of sawdust/compost inoculated with shitaki) with my hand one day and within 3 days I could see mold growing in the shape of a hand on it =P
