The guy behind is the spotter. He should have his hands out to catch his friend's shoulders if he falls. The idea is that he should never land on his head. :)

Most of the time when people go bouldering (climb boulders without ropes, usually no higher than 30 ft) they go with friends to spot them. At 1:25 when the guy moves the pad he's just making sure that if the guy climbing falls he'll land on the pad not the rocks. I strongly suggest you look up your local gym and give climbing a try.
