Thanks for the video! Got a question for you. Do you pour the hot coals right into the open center? How do you find that works? I just throw the hot coals on top, but I can see an advantage for doing it your way. How long before the wood actually starts to smoke doing this.
@tinboats I usually do dump the lit coals in the opening that I have created in the center. I always have at least one piece of wood that comes in contact with the hot coals right away and then some towards the outer part of the charcoal ring, thinking I'll get a slow consistent smoke for several hours, with a full ring of charcoal lasting 12+ hours depending how hot I'm letting it burn at. For this cook, the coals lasted 7-8 hours.
