  • I know that Southerners love eating chicken and waffles, but the dish (at least the version he made) was originally created in Harlem. I learned that from watching other Food Network shows.

  • I have to agree with Alton here, when he suggests using maple syrup rather than brown gravy on Waffles and Chicken - I am not Southern nor have I ever been to the south plus I am not a big fan of mixing meat and sweet together but certain meats can go extremely good with certain forms of sweetness in my opinion. I never had this delicacy but I have tasted similar flavors to the point that I can, with confidence, imagine its heavenly goodness! Eat up and Enjoy! Long live the Good Eats!

  • What Alton may not know (or isn't telling us) is that this wonderfl lesathin he so dearly loves in his nonstick spray is the reason for the sticky build up, over time of course, once found coating all my bakeware, which is damned near impossible to remove without also removing the finish on the bakeware piece. This is why I only use nonstick spray on foil-lined pans anymore. Otherwise, I prefer to take the extra minute or two to grease with shortening, by hand.

  • surfactant is pronounced " sir fact ant" which is a bipolar solvent which reduces the surface-tension of a fluid (for example soap in water)

  • I don't think these waffles cook up crunchy even on the hottest setting.
