    I have never substituted whipping cream for double cream in this recipe but I feel sure it will be a good substitute.

    if you mean the metal ring with crinkles, they are called pastry cutters. They usually come in a set of 3 different sizes.

    They are usually easy to get hold of and very useful :)

    Try Amazon, ebay or a shop that sells items for cooking.

    I hope I have answered your question and you find them ok.

  • Tip: If you mix the sugar and the flour first, then add the wet ingredients you won't have to worry about lumps in the custard

    I have never had the tesco brand tarts. Maybe they are using shortcrust pastry in stead of puff pastry.

    Shortcrust pastry is the pastry you would use for jam tarts.

    I love the cornish pasties from cornwall a meal in one and very tasty.

    As you say the cream from cornwall/devon is very nice.

    I will be releasing a vidoe soon of scones with cornish clotted cream and jam. Maybe you might enjoy that one :)

    I have never considered adding other things such as marmalade, jam with the custard.

    Certainly you could substitute the custard for marmalade or jam.

    Custard is like most recipes, easy once you know how.

    The egg whites, I must confess I did not do anything with those. After making the tarts the dinner and the washing up. I called it a day!

    I guess ‘meringue’ would be an easy thing to make use of the eggs whites.

  • ....and then there's the American influence, the elephant to our south, kinda hard to ignore....and they do incredibly interesting things to the English language (insert memories of a recent president). Language is a living thing, always fun.

  • Seriously though, the 1st time I saw caster sugar in a recipe I had no idea what the heck it was, I had to look it up in the dictionary. Here in Canada we just say sugar; our recipe books call for "sugar," white sugar is what is meant, on our packaging it might say "granulated sugar". I am always curious when British sourced books use different words considering my 1st language is English and you guys are the "big bang" so-to-speak, for English...heehee.

  • Wow, ur sugar oackaging actually does say "Caster Sugar" and here I thought for all these years that it was an evil prank on the part of some European and Asian cook books to confuse me hahahahahah! Thx for the vid.

    Funny comment :))

    Over here there are 3 main types of white sugar easily available.

    Granulated (course grain) mainly used in a cup of tea coffee and cereals etc.

    Castor sugar (slightly finer) used mainly for cooking as it dissolves quicker.

    Icing sugar (powdery) for making icing on cakes.

    In Canada have you ever seen ‘bakers sugar’ available? That may be the same as castor sugar.

    Yes I think ‘bakers sugar’ would be an appropriate name. Although from what I read, bakers use different size granules for different recipes. I did not realize baking with sugar was so technical J

    ‘Super fine sugar’ sounds like it could be for icing cakes powdery.

    Now you have solved the mystery of caster sugar you just need to locate some J

  • Very nice once again, very similiar to our Portuguese NATAS, the best part is cinnamon on the top of the tart, if i dont know u're british i would say u're portuguese :))) wink wink

    Yes there are some similarities to Natas :)

    That sprinkle of cinnamon really does finish it off nicely.

    I guess you could use short crust pastry. I like the puff pastry as its nice and light and it looks great at the end where the custard and pastry have joined together.

    If you decide to try the short crust pastry, let me know how it looks at the end.
