Here in Canada we just say sugar; our recipe books call for "sugar," white sugar is what is meant, on our packaging it might say "granulated sugar". I am always curious when British sourced books use different words considering my 1st language is English and you guys are the "big bang" so-to-speak, for English...heehee.

Yes I think ‘bakers sugar’ would be an appropriate name. Although from what I read, bakers use different size granules for different recipes. I did not realize baking with sugar was so technical J

I guess you could use short crust pastry. I like the puff pastry as its nice and light and it looks great at the end where the custard and pastry have joined together.

if you mean the metal ring with crinkles, they are called pastry cutters. They usually come in a set of 3 different sizes.
They are usually easy to get hold of and very useful :)
Try Amazon, ebay or a shop that sells items for cooking.

Tip: If you mix the sugar and the flour first, then add the wet ingredients you won't have to worry about lumps in the custard

I have never had the tesco brand tarts. Maybe they are using shortcrust pastry in stead of puff pastry.
Shortcrust pastry is the pastry you would use for jam tarts.

I love the cornish pasties from cornwall a meal in one and very tasty.
As you say the cream from cornwall/devon is very nice.

I have never considered adding other things such as marmalade, jam with the custard.
Certainly you could substitute the custard for marmalade or jam.

Custard is like most recipes, easy once you know how.
The egg whites, I must confess I did not do anything with those. After making the tarts the dinner and the washing up. I called it a day!
I guess ‘meringue’ would be an easy thing to make use of the eggs whites.

Funny comment :))
Over here there are 3 main types of white sugar easily available.
Granulated (course grain) mainly used in a cup of tea coffee and cereals etc.
Castor sugar (slightly finer) used mainly for cooking as it dissolves quicker.
Icing sugar (powdery) for making icing on cakes.
In Canada have you ever seen ‘bakers sugar’ available? That may be the same as castor sugar.
