  • My family is from New Orleans and Shreveport so I grew up with gumbo...this looks more like my Daddy's "Ve-ge-teble" stew! And his took all afternoon to cook so I'm gonna have to try yours! :D

    Not in any Creole Gumbo that I've ever seen. None of my mother's family (all Creole) have ever used tomato paste or sauce in their gumbos....ever. A roux of flour and oil is always made. Yes tomato is used in creole cooking, for things like jambalaya, as I mentioned earlier. But in an authentic Creole gumbo? No, not that I've seen. Maybe it's a new thing. Have you always used tomatos in your gumbo?

  • @tmcalis566 I think you all are going too deep on my video. Please don't waste your time investigating on "MY" recipe. I never once stated that this was a AUTEHENTIC CREOLE GUMBO. Yes, I know how to make a roux. This is my version of POOR MAN's GUMBO, aka stew. Please keep in mind, not everyone is going to cook the way your relatives cook. In the meantime google Authentic Creole Gumbo, because that's what you're looking for. Thanks and good day

  • @tmcalis566 Ive always put tomato sauce in my gumbo you should try it, its good. Instead of criticizing people on there authenticity maybe you should try thinking outside the box and try some stuff. If you know how to make gumbo so well why are you watching a recipe video? I watch em to get new ideas and to try stuff ive never tried before.

  • Hmm....my mom's family is Creole, and i've also never have seen tomato paste/sauce used. I'm assuming the tomato sauce serves as a roux??? The roux (flower/oil) is what defines the soup as a "gumbo", from what I've been taught. Have you ever made gumbo with browning your flour and oil in a skillet? You should definitely try it :)

    Also,they add a little tomato paste for a jumbalaya dish, but never have seen it placed in an authentic gumbo.

  • This isn't poor man's gumbo, you have king crab in there, but I understand it can be called that because of the incredible price you got the crab for. I love king crab all alone with some drawn butter. If I could find it for $5.99 a lb. I would but a lot and keep it in the freezer. Snow crab in my area is $6.99 lb right now.

  • You'd be surprised in CA, hell even my 1st time trying in NC I went to 3 markets and could not find Gumbo file to save my life, luckily I have some.... Your gumbo looks mouth watering !!! Seems like it tastes better the next day once all those flavors get to dance around.. MMMMMM i need to make me some girl !!!

  • Nice recipe. I recommend adding the seafood (shrimp) last. That way it will be tender and not tough.

  • @tearrashowell1 It will turn bright red. It usually doesn't take long for crab to cook.. maybe boil for 10-15 mins. OR buy cooked crab

  • @ladyrosie1983- try this recipe out.. my gramps recipe that's been in the fam for years.. Fucking BOMB !! FILE GUMBO Boil chicken (turkey legs) 4lbs W/ 8 cups of water 8 Tsp. chicken bouillons, Hand full of celery tops 1Tbsp Dried onions ¼ bell pepper (about ½ cup) Tsp garlic powder. Boil until tender (meat easily pulls off of bone) let it cool. Remove meat from bone Strain broth. (Set aside) (Hour or hour and ½) ALL ABOVE IN ONE POT
  • @mixwell1983 - After you have your chicken/turkey.. then...

    in pot put 1/3-cup bacon grease.

    Sauté 1 small bell pepper (chopped) & one cup onions (chopped) for 5mins.

    Add ½ cupflower and brown. add broth to make 8 cups.

    Add water if more is needed.

    Add 2 large cans whole tomatoes (squished) cover and simmer for 30 mins.

    Add 1 lb of sliced hot links (Farmer John hot links)(after 15 mins)

    Once simmering is done

    Add 10oz of frozen cut okra,

    2lbs-cleaned shrimp,

    2lbs crap legs.

    Simmer till shrimp is pink.

    2Tsp gumbo FILE,

    1 tsp Cayenne pepper.

  • Hey Rosie! Looks good! Question. I noticed that you added your shrimp pretty early. how do you keep them from overcooking?

  • It did look like I added it early but the chicken was completely done when I added the shrimp and ect. I just lower the heat to prevent them from over cooking :-)
