Because in the lebanese dialect the letter "Kaf" is pronounced as "Af" so kamar becomes amar and kul becomes oul hope that answers your question

I hear "amar," which my dictionary of Egyptian Arabic lists as "moon" (قمر).

The very first letter of that word, with two dots on top, needs to come from the throat. It's "qaaf.' It spelled as "qamar" but when you speak you say "amar." This applies to some Persian words. Same with mosh adra astana, when you write it says "mish qadra astany"
