How do you keep the dough from sticking to your knuckles when you punch it like that. For this reason I prefer to use a rolling pin or anything that will serve as a rolling pin for that matter.
@nicodemoscarfo Sure, go ahead and use a rolling pin; whatever works best for you. I've just always used my fists to punch it down, and then stretch it out on the back of my hands. If the dough gets a little sticky, I just rub a little more flour on it. Sometimes I flour both side of the raised dough ball if it's really soft to prevent stickiness.

Re: whole wheat dough.......You need to add a little more liquid to this type of dough. I've made a good whole wheat dough that was 33% whole wheat flour, and it raised fairly well. The finished pizza was good.
I did make the video on the baking stone method, but right when I pulled the pizza out of the oven, the battery on my video camera went dead, and I wasn't able to get "the money shot" of the finished pizza...what timing! So I'm going to redo the ending, edit the video, and then upload it. Hope to have it uploaded soon....Appreciate your comments.
Hey guy, where's your video for baking on a pizza stone? I have a stone coming in the mail some time this week, would love to learn your technique . Also will have to try your dough recipe as mine (dough) always comes out hard/dry and does not rise much, especially the 100% whole wheat dough.
