cross hatching??? ...ive found that on gas and charcoal grills, searing the steak over high heat- on both sides- and then transfering it to medium low will allow you to get that crispy shell while maintaining a soft interior....did I see a thermometer??...I love that this dude is so passionate about grilling, but everyone should learn the touch-test...you loose juices- and internal temperature- with thermometers..
