Fine cuisine isnt about being really full. Fine cuisine is about the experience, the symphony of flavors, the textures, the colors, the quality, the beauty. Its about tasting something you dont find everywhere and sampling different experiences. It doesnt only show a chefs cooking skills, but his ability to surprise you with combination or hidden gems.

At high end culinary restaurants, the purpose of having a meal is less about filling one's stomach and more about experiencing the chef's mastery of taste, smell, presentation etc just like how the purpose of attending an orchestra is to experience the musician's mastery of melodies, rhythm etc.
I believe this consumption of art - in high dining, music, literature, paintings, movies etc is just as filling as food. But it feed the soul, not the stomach.
I will never waste my money on this kind of food. These kind of foods are so pretentious to me.

@sever3d it's chervil. looks like parsley/coriander but much smaller. it's a common garnish for seafood dishes.
