If you have sturdy processor only or use meat grinder or simply wrap your dough in plastic and walk on it hard. It is very interesting...my mother in law used to live in Zambia many years back and they used to wrap khichiya dough in big sheets or plastic and then slowly run car wheels on it and dough is ready in no time...I do not recommend thoug...if you making small amount you can just do with your hand or feet...enjoy!
u have 2 video for papad.i m lil confused...................so if we do khichu in oven we dont need to cook it again like u did in your 1st video.....right?....in 1st video we made khichu and again we steamed it....so pls answer me when u get chance....thanks.
Very nice video and very well explained. I have a question. For this khichiya papad, the rice flour that you are using , is this store bought? Because when i use the store bought rice flour( Deep Brand) , it seems my papad always always cracks while i keep them for drying. They crack terribly into very small pieces. I wanted to know if you are using fresh rice flour directly from India or the ones from the US Stores. Thanks in advance for your reply.
i had the same issue and i tried this...just would like to share that in India, some people mix a little bit of sabudana in rice when they send it to get grinded...that provides a good bonding if your rice are old..so we can soak a bit of sabudana and blend and add to rice flour while making khichu.. my papads tutned out great this way..no difference in taste though..
@gujjugal100 hey thanks for sharing this. My khichiya turned out great the next time i tried. I think i used to cook the dough for a long time. So I made sure and did not over cook my dough and the khichiya papad did not crack :)
I was so excited when they dried without breaking and they taste even better. But i shall keep this tip in mind if I need to use it in future !! THanks once again :)
thank you ji. you are an excellent teacher and an expert! i also enjoy listening to a little wonder in the background making lovely sounds. to me it sounds like a little angel who is on the road to success. maybe we might get to see this angel.May God bless your family and loved ones.
Yes, my two little monkeys are around me when I do shows. Sometimes, they play outside if weather is good. But other than that I have to manage with them. They are already in some videos. Enjoy!
this video is very well made, I see you are dedicated to your art of cooking, you wake up and know "today we are going to make papad "start to finish", i recall helping my mother many years a go doing the same. and it was nice you shared part of you home and garden as you expedited the whole process of making Papadi, I am a single father and recently a novice cook, but i will try this and a few others, pls do a healthy low salt, good cholesterol diet, my blessing to U and your family

For 1 cup rice flour, add 1/4 tsp papadkharo but if you khichiya breaks, that's not b/c of less/more papadkharo but it has to do with not steamed properly or over steamed your khichiya lot. So next time careful about steaming time. Enjoy!
Actually pappadums are very thin and they taste even totally different. This khichiya is made from rice flour and pappadum is made from Urad flour. Enjoy!

Hi
I do use store bought Laxmi brand flour. Your khichiya might break if the dough is not cooked well. Hope this might help.
