  • Ham hocks in the peas and rice is usually American Southern. My mother didn't use ham hocks in her rice.

  • My family is from Barbados (dad's side) and we have a Gittens in the family tree. I wonder if there is a relation? :-)

    Also my Bajan relatives like to put a hammock for flavor in the rice and peas. I am not sure if that is authentic or not...but seeing as they are from Barbados...I won't argue.

  • Did you drain the pigeon peas?

  • @sinfuldavy0 Drain the peas and reserve the water.  You may add the water from the peas when measuring cups of water to cook the rice. Thanks for asking.
