Also my Bajan relatives like to put a hammock for flavor in the rice and peas. I am not sure if that is authentic or not...but seeing as they are from Barbados...I won't argue.
@sinfuldavy0 Drain the peas and reserve the water. You may add the water from the peas when measuring cups of water to cook the rice. Thanks for asking.

Ham hocks in the peas and rice is usually American Southern. My mother didn't use ham hocks in her rice.
