  • Looks interesting! In New Mexico, we would switch out the tomatillo sauce for a green chile sauce (made with chicken broth and green chiles), and mix in some sour cream and cheese with that sauce to put inside with the chicken. Then top with more sauce and cheese. Yummeh!

  • Well Happy Twoth Anniversary, lady! It's been a fun two years. I haven't done enchiladas in a while, and I'd forgotten how easy they are. Guess I'll have to whip up a good hangover so I can make a batch.

  • Now that was a geat recipe! I love the taste of a simmered tomatillo sauce. I like to add fresh cumin (comino) seed, blasted to a powder in a coffee grinder. The earthy flavor burst of fresh cumin powder really compliments the subdued tart flavor of the tomatillos.

  • So you bring to a simmer then wait 4 min then turn it off for the chicken poach

  • @Philipe0849 Right. Simmer 5 minutes then let it sit another 5-10 depending on how much you are cooking. This is for boneless chicken only, though, Bone-in will take a longer simmer.

  • @aglanceatmyworld I used a 7x11 inch in the vid, to make 6. The recipe I put in the description box is to make 12, though, and I use a 9x13 pan for that.

  • @deffcat Nope! I don't put cumin in mine because I prefer the fresh tartness to be the main flavor, but a little bit is good. Try it and see if you like it!
