I was hoping to use tapioca as a way to make my own organic breads/candies/thickeners as a substitute for wheat and corn starch. I'm trying to learn as much about the cassava plant and it's uses as possible.. (I'd like to grow some in a greenhouse.) Cassava has to be processed for safety purposes, is this correct? Or is that only the bitter species? If I grind and dry it, could I use a second machine to turn it into some kind of flour? I might buy me one of these machines! Does a good job!
