sorry if my post confuses ... by "this dhokla" I mean Rahat's recipe.

more often in home setting dhokla means not this but khatta dhokla made from fermented rice and urad batter, When a Guj housewife says I made dhokla today she mean khatta dhokla. But when bought from a shop it is almost always this dhokla also known as Khaman dhokla. There is a third variety called Muthiya dhokla made from left over rice and besan. Housewife will say today I made Muthiya when she makes it. It too almost exlusively home cooked.
