its partly to do with how cameras work and eyes work. they have an iris that only permits the right amount of light in. to open the iris big enough to let the starlight in would over expose the image and make the sun white out the screen. test this by taking a digital photo of the sun with the aperture set on auto and see what details you can see.

As we are more than awed by this replica of the earth rise I am thinking of an artcle by a psychologist and how people will realize the vastness of creation so that their minds will shrink

You put stars in the background! This is what one would expect to see!
However, most of the 'OFFICIAL' videos from NASA show no stars.
Kinda makes me wonder how that is possible.

The atmosphere on earth is the reason you have trouble seeing the stars in the daytime here.
With no atmosphere, you should see millions of stars in the blackness.
