I was taught whatever you put in the oil first flavors the oil and hence the whole dish, so it's really up to the cook what to add first. The Taiwanese lady who taugt me to cook Chinese always started with the onion. I like to start with minced garlic and ginger, and maybe carrot. Looks like a really good recipe.

Either you don't watch alot of cooking shows or you had the volume up too high. I don't find the scraping noise annoying, maybe I'm immune to it.

about the eggs: maybe he forgot to put it first so instead of not putting any egg at all, he chose to put it at the end.. a bit nervous maybe haha..
btw, putting egg at the end is quite common for some asian cuisine. Especially if cooking with noodles and rice noodles.. but not so much with rice..
