The Dock is only a shortcut to applications and documents, thus dragging an application from the Stack will not uninstall it.
Normally it is more than enough to just drag the application from the actual Applications folder open in a Finder window to the Trash
If you want to delete all the files an application has left behind, small files in most cases, which don't slow down your Mac, then look for the "Uninstalling Applications in Mac OS X" guide on MacRumors.
