that's a lot different than the traditional method of cooking them. my family is from south caroilna. we do not use garlic or cook the onions with the collards. we make use smoke turkey.it's healthier than the smoked salt pork. and we only cook them in the winter after the frost hit them. collards are not a summer or fall green. onions and garlic. wow. i know a lot of elderly that would laugh. but different parts of the south do things different. as you have shown.
