He didn't chop him up to kill him, he chopped him up because he needed to dispose of the body and he was out of his mind on drugs, and it's much easier to dispose of it in parts. It started out as self defense and spiralled out of control, and in all honesty, all three of them were to blame. Micheal shouldn't have gone as far as he did, but Angel shouldn't have started a fight, and Freeze should have done something like broken his kneecaps to cripple him rather than blugeon him to death.
