thank you chef for letting all of us know that fowl needs plenty of room to roam and the better it is for the flesh of the bird---many of the outlets that sell fowl in canada and america are super squashed--what a shame.....i will not buy from any corp. that jamms all the fowl too close or kept in cages with 29 others....

i am a cook and enjoy doing different dishes--this poularde looks sooo yummy--i must try this recepe -- and such a healthy dish.
