Using a pan lid, using baking soda, or a fire extinguisher are all good things. However, a fire extinguisher should not be hidden, because during an emergency, you don't have time to look for it.
@LeksServices - Any powder you can get a hold of quickly is a good thing in this scenario. Flour, pancake mix, salt, even sugar would work. You just have to dump a lot of it on the fire when you see what's happening. It will make a helluva' mess, and may take a long time to clean up, but at least you'll still have a kitchen to clean up.
Really, if you can not put it out using method one you have the kitchen skill of a two year old and would do all around you and yourself a favour if you never made any food again. Yea really.
