I've had these in the past, and one thing I liked was how light and airy they are. I think I'll double the vanilla. LOL

They are so pretty! I have the same issues when sending cookies out. They have to be travel worthy and not too friable.

As soon as I saw "Hawaiian" i knew coconut would be involved. Sadly, coconut and I are not on speaking terms. ;) . I love tea cookies though. I bake with my nieces around the holidays so I'm always looking to bring a new recipe.

@imperceptibleme My new mixer arrived this afternoon so I'll be busy baking over the next few days. I'm first going to have a stab at the Christmas Tree sweet (made with ice cream cones and a digestive biscuit...and some other bits...lol) using Tammy's instructions. I thought the grandkids would think they were cool :) I'll definitely be making your cookie recipe too...got in the extra ingredients I needed today :) x

I think they are called Hawaiian tea cookies because of the coconut. Also, you're probably supposed to drink tea while you eat hem.
