  • I was always taught to use a cast iron skillet instead of stainless steel and use vegatable oil.

    For those interested, I have found Yank Sing to have a very good chili oil that can be found in grocery stores to be very flavorful.

  • Thanks for writing. I have never heard of a cast iron pot being used for this. The chili oil looks interesting. I will try to find it out here.

  • Yes, there is a Dim Sum house that makes great homemade Potstickers that I used to go to and they always used cast iron skillets. They would simply put some vegatable oil to coat the bottom of the skillet and then add water after the initial browning. They would add a little oil after the water disappaited and then brown the bottoms a second time. It's kind of an art in terms of timing, but they come out perfect when one has the timing perfected.

  • like Pierogi one could throw them back into oil once they are steamed to crisp the outside. Ya know its sad that Asian restaurant now a days buy there food from warehouse manufacturers. all th ey do is buy a bag and re-heat them. I would like to go to a restaurant and actually have hand made dumplings/pot stickers and pay an extra couple dollars. Very nice video, thanks for the tips.
