You would be surprised. I was a Mechanical Engineer before I went into Music. There is a great amount of that type of thinking within Music as well, especially music theory: the study of how music works. There are plenty of rules and laws and problem solving that spans multiple levels, not just analytical but psychological, socialogical, temporal, and artistic levels all at once and all interwoven. And that's on top of the 4-8 hours a day you're expected to practice.
Oh, and also historical. It has been found that Music engages nearly every area of the brain that we have so far identified, and nearly every neural subsystem. So, yes, it does require the same level of critical thinking as the sciences, but also the same level of thinking everywhere else throughout the brain. The time commitment is also enormous. You need on average 10,000 hours of practice to reach a professional on an instrument. Then there's homework.
A doctorate in music? How does that make you more educated? It's in bloody MUSIC!! Do a physics degree then you can come back and say you're more educated!
