  • @scorcha101 It's preference. How some people like salmon is what other people would consider under cooked. Some people like it cooked through and moist. Some people like it dry.

    You can cook your salmon however you want to. You don't have to eat what Chef John cooked.

  • @LittoBUbbo that sounds amazing! i see a lot of rolls with crispy salmon skin in it, but not as an actual wrap. Creative! i just grilled a nice fillet of salmon on the George Foreman grill and topped with mushroom teriyaki sauce and it was epic, and yes, i ate the skin!

  • @meph1975 Well...my uncle is a chef at the Waldorf Astoria, so thats where I got the mustard dill sauce recipe. It is my personal favorite on a salmon fillet. You should try it before criticizing and if you cant play nice with others....maybe you shouldnt play.

  • I just made this recipe, and the flavor is awesome! The only problem is the cost of the ingredients. I found a pint of the mild yellow miso in the refrigerator section of an asian grocery store, for $4.50, and I doubt I will use it for any other purpose. The pure maple syrup was $10, but at least I will use it up on my Eggo waffles. LOL!

    In conclusion: this was the best salmon I have ever tasted.

  • @mongolandcult You can make miso soup! Throw in some soft tofu cubes and green onions and you got your self a nice hot bowl of miso soup.

  • I have a hard time liking salmon as I find it tastes too fishy for me (I know, sounds like an oxymoron, but I find some fish don´t taste as fishy for example sea bass) I would like to like salmon as it´s very good for you, any idea how i can overcome this problem?

  • @KatPotter71 There are different kinds of salmon. Try king salmon. It doesn't taste as fishy as farm raised salmon. Squeeze some lemon over top and you are good to go.

  • This is basically my go to marinade for salmon. Equal portions of soy sauce, vinegar, and maple syrup.

  • @loldotalol379 No need to insult him. There are people that hate the skin. Honestly I do like Chef John's method. The skin does give moisture and a fuss free method.

    But personally the crispy skin is a delicacy.

  • Crispy skin is a real treat, never thought of it until I made Halibut for a party and one of the Thai women attending wanted it, so I crisped it up and she tossed on chili flakes... mmmm!

  • @kyuutatsu The color of the miso is the strength of the soup (I think) because I know white miso soup tastes a lot weaker than the brown miso soup. As for maple syrup, quebec brands are the best and don't cheap out. Make sure it's real and canadian or from vermont.

  • @GrowingUpIsOld Well all I own is Red Miso, which is my preferred Miso color, which is why I asked, I like the strong taste of it, White is much to subdued for me. Though I would hope, the label will say where it's from, correct?

  • @kyuutatsu Yes the maple syrup should say it's origin on the bottle. It's hard to mess up maple syrup, there's only a few brands really. Just don't get the fake stuff! (corn syrup made to look like maple syrup)

  • @kyuutatsu there are several type of miso, the chef used yellow miso.

    there is also dark brown miso, which is the saltiest, and white miso, the least salty.

  • @houchi69 Oh I'm aware of the colors of Miso, just, I tend to stick with Red (dark brown?) just because I'm sodium freak.

  • if you're near a heavily populated asian neighborhood, don't get miso paste, soy bean paste, rice vinegar, sesame oil, soy sauce, or fish sauce from fancy grocery stores. go to an asian supermarket -- you will save a TON of money. if the store is kinda dirty, just wash your bottles and cans when you get home.
