That way we have two separate audio signals to tweak, e.q., and mix together for a fuller sound.

Balancing the mix doesn't necessarily sound more "produced". My guitar has two pickups in it, a peizo and a magnetic. I also use a mic.

Each picks up different sounds and you mix the different sounds together to get your desired output.

I would assume that the pickup is for getting a clear tone from the guitar that the mic might dull, while the mic itself helps pickup the acoustic nuances like fingers sliding on the fretboard and drumming on the guitar body that the pickup wouldn't get

The bass is audible enough, as to whether its loud enough that depends on how present you want it. It fits in at the moment without overpowering but if you want Red Hot Chilis style bass then crank it up ;)

I've just flicked through some of the other videos to remind me of the kind of sound you go for and they tend to be quite light in the bass so I think its probably what you were aiming for.
