Did you visit indianrecipevideo(dot)com? if so, there is a written recipe with different style...anyways, 1 gallon is about 3.8ltr. For chenna/paneer, use the amount recipes asks for. Since I am very good at eyeballing, I make just enough I need for this recipe so I use all of it....I make this recipe in 2-3 ways and I shared all possible option on site to make it more clear and easy. All you are going to do is make chenna and cook with condensed milk and you kalakand ready
Ricotta can be used but do not use ricotta directly. Firt make Khoya out of Ricotta by cooking it till all moisture is gone from chees....hope this helps..

If you want to replace milk powder, you will have to boil milk till it gets very thick like paste, if you take may be 5 cups of milk, you will get only less than 1 cup of solid. So it takes lot of time to make mawa from milk. And that's the reason I use milk powder to save my lot of time. But if you don't have, use fat milk and make mawa out of it or buy fresh mawa available these days at indian grocers...enjoy!
But I would like to say that don't use food colour as you haven't used in any of your recipes, I do watch and make your recipes. I would say at home don't use citric acid also as that is not good for bones thought.(Just suggestion !!!!)

Use Coconut Milk instead.
Much healthier.
You can also use Virgin Coconut Oil. Also Lime juice can be used in the same way.
