The first landing is a 777 during certification the thing hanging from the rudder is a wind speed monitor with a cluster of other sensors used only during certification. It is NOT normal flight equipment.
These are from the 777 test flights that are run prior to getting flight certification. There are extreme conditions to determine and demonstrate the limits of the airframe and engines.
haven flown in the BOEING 707 for the past 12 years in U.S. Navy TACAMO, i can say i have seen far more crosswind landings that gave us the pucker factor. try being in the flight deck observer's seat during this maneuver.

Amazing isn't it? These guys (and probably gals too) crabbing until the mains touch and then kicking it to line the fuselage up with the centerline just in time for the nosewheel to touch. And I have a hard enough time doing it in a Piper Aztec!
To use your analogy, imagine you are attempting to steer a straight course in the ocean with sloppy 20' seas. Which vessel is going to allow you to maintain greater control of your surfaces? I will take the larger, heavier ship over the kayak everytime. Now, substitute wind for waves and planes for boats and you may see my point. Have a great day.
I was in an airplane on my way to the far north of Norway during a Winterstorm. I got to "enjoy" 5 landings or so before i reached my destination and each stop was a nightmare. I recall looking out the window and i could see the runway as if i was sitting up front in the cocpit. Just before it landed the pilot somehow straighted it up. The locals said this was just a little bit worse than Normal. Simply Amazing plane and pilot skills.

Is your average airline pilot even allowed to land in such crosswinds, rather than divert, under the the FAA rules?
Boeing has good test pilots. Probably retired military. Hope so. Lots at stake.

IMO... the bigger the plane the easier the landing. I'm guessing these pilots would have a tough time stepping back down in size to your Aztec.

I think I know one way the pilots make it look easy.
With smaller planes, bystanders and cameramen may be close enough to see the pilot - however pale and sweaty he or she may be.
Big boy planes let you look as cool as a cucumber to anyone not in the cockpit.
