it is often to get a pour with a spiral effect, it also gives a nice marble effect to the unaltered top of the coffee.

dude maybe if you watched the whole video you would notice that most of my designs are free pour you don't see me etching the phoenix do you, plus almost all my designs are majority free pour. if i do etch its only one or two lines. i think you should look through the rest of my video's ( like the free pour man, or swan just to name a few) before jumping to conclusions. also if your so mr fantastic barista why dont you put some videos up of your own work and let people critize what you do
