  • The graph you show is certainly skewed to your advantage.

    What is the difference between a level 6 and a level 8 mmol "spike" ? To a diabetic, very little. This graph certainly indicates little advantage in eating so called "low GI" food.

    ALL digestible carbohydrates dangerously "spike" blood sugar levels irrespective of GI.

    The whole subject of GI needs a drastic rethink. I have tried to show this in my video-
