nonstick spray is awesome to use to make the cakes shiny i spray it really far back from the cakes then use a soft brush to even it out. by the next day it has set and it looks great
hi. how do you make the gumpaste? is there any alternative for the snowflake dust? we have a mini-cake decorating contest at school this week and i really haven't decided yet on what to use. the theme for the upcoming event is graduation. please help. i'm a beginner. we need to use 4 mini cakes, either round(3in diameter) or a square shaped (3x3in), all decorations should be edible.
do you cut out your own cake boards? i try cutting them but it's a lil hard. either i cut them too small or the board bends or sticks out. any advice?
For minicakes I do cut out my own board. I just get some cardboard and draw the size of my minicakes on them and then cut them out. After doing that, I cover them with foil paper. If the stick out, I just cut that bit away. I usually place the cake on the board even before crumb coating them. Once they are covered with fondant, the cardboard can not be seen.
hi nivia! you really have beautiful cakes..i've been looking for a caramel sauce/ caramel filling but i just can't find a good one.. if you don't mind, can you give me your caramel recipre, please? and oh, the buttercream too, since you mentioned it here..i've never tried fondant and never baked a cake, hehe
Hi Irene, thank you very much for your kind words. I dont usually make my own caramel sauce, I buy it from any supermarket and it is called dulce de leche. There is a way of making your own, you just need to buy a can of condensed milk and boil it for 2 hours with the can closed.
For the buttercream there is a wonderful recipe here on youtube given by a channel called SeriousCakes
I have bought the funky alphabet cutters I have only tried them once and then gave up. Maybe it was because i used fondant and not gumpaste? Yours look great, did you do anything to make them come out so well? Cover the cutters in shortening or sugar or anything? I think these cakes look wonderful! -Danielle x
There is a video on youtube that shows how to use them, just look for a channel called aine2. I used gumpaste and covered the cutters with icing sugar, and then took the letters off with a dry paint brush.
Thank you so much Rylan, you always put a smile on my face!
The frosting was the regular recipe of a buttercream but instead of using milk or water, you add heavy whipping cream. It won't crust so dont use it if you are going to cover the with fondant. I did that and it was a disaster, a complete mess!
The buttercream is very smooth and it has got a delicate flavour.
Lovely work on the bows. Great job. I sometimes use buttercream (butter mixed with icing sugar) - if you use a very very thin coating of it (much less than what is in your photos) then it should not be messy, just enough for the fondant to stick :) Have a go next time.
Thank you :) They are made of gumpaste. I bought the pale pink gumpaste because it was a bit difficult to get that colour by only adding pink colouring paste to the white gumpaste.
Me again!! hahaa I know I need a life!! I'm just a cakedecorator-aholic! haahaha, I wanted to say I looove this cake! it's so pretty!!! the minicakes and the bottom one are both very cute!! The only observatin I have is (at least on camera) the gumpaste funky alphabet letters being white, they blen in a lot with the baground being a busy pattern...But overall the cake is very sweet!!! Wonderful job!!
I think you are right about the funky alphabet, you can bearly see it and it kind of busy. I just wanted to right I love you and use them for the first time! : D
Thank you so much for your sincerity, I really appreciate it. A bit of critizism is always to go in order to improve :)
looks great - thanx

I didn't realize you had made a valentine cake until now.
I love the impression on the fondant. It's very elegant, yet fun. I also love the ribbon, it looks very real.
Oh and which buttercream do you use? it looked very smooth
