@juneyeoh629 Actually June, they make fresh noodles and meat pies daily, it's like how we make toast, it routine and no one thinks about the rising time because they do chores inbetween .... For sure, nothing tastes better than FRESH !
@konagal Fresh always good ,i been to china many times but always saw the noodle making in the restaurant and always feel that is really amazing ,now i living in Finland ,here is hard to find a original chinese food ,so this is why i search for this noodle making in You tube and i will try to do some day because i miss the noodle so much ,when come to my situation ,i will make and cook for myself more and you tube is my chef master ,i made many foods which from my hometown Malaysia too
@ari2u Yes the dough was put into huge bowls and covered with towels, then we went walking for almost 2 hours and the dough had risen and she worked it into noodles by pulling
@casperelle1 she poured the salt into her palm and then put into the warm water to dissolve before adding to pile of flour on the table..... I haven't a clue about the measurements, no one used cups or spoons for measuring. sorry
@casperelle1 In traditional chinese coooking, there is really not an exact measurement of anything. It's by sight and experience. so, a dash......... :P

This is wheat flour. probably a zero type (you'd better use one having at least 480 or 700mg of minerals in it but it could be less sticky).
Chinese would never make noodles with potatoe flour, lol :) Thats what we do in Austria. But as you can see, this is clearly wheat. Its also not durum, because it would be a bit yellowish.
this morning i phoned the daughter and asked about the potato flour being used in the noodles, she stated the potato flour is only for dusting the board and dough

I didn't see Mama Xue measure anything, she put flour on table, added salt to warm water and then added to flour till she reaches the texture and consistency she was looking for.... kneading time depends how flour is reacting to the air//water, it's a texture thing.... i know the flour sat with cloth on top of bowl while we went for an hour walk & then she returned to cut the dough.... sorry i'm not more helpful....i'm just the observer and the taster , lucky me !
If you use english, it would be easier to get help. The flour used in this recipe is chinese wheat flour, that has much less protein (gluten) than generally sold all-purpose flour. About 7% against 10%. You can try using pastry flour or cake flour.
From what I've gathered from other noodle making videos, the key is to knead the dough for at least 20 minutes to get the gluten to break down. Then the dough (made with all purpose flour) becomes stretchy.
the only word about flour in this video states "potato" flour .... now i'm not sure if that is what she dusted the dough with as she cut into strips or if that is the type of flour she used exclusively .... I shall try and find out the factual answer and get back with you soon....aloha, teri

I can confirm that. I make noodles for chicken soup, really simple recipe:salt, flour, egg, water.
You have to knead the stuff for-ever to get the gluten to start doing its thing and then the dough is all sorts of stretchy.

The information here is unclear and I tried using regular all-purpose flours and the minute I tried stretching it, the string of noodle broke.
