  • Okay, so I just tried to make this, I let it set in the fridge for 3½ hours - I took a roll of it and started to shape it - It just melted in my hands the instant I touched it.. Fortunately a teaspoon is my best friend and will help me with the dessert ;)

  • @Sagecage100 You want something with a specific fat content. Wiki has a great page for that. Under 'cream'. There are different countries and the fat contents of the creams they use so you can match American creams to British Creams to Australian Creams. It's excellent. I assume it's accurate.

    However, its always a good idea to check the content that it says on the tub of the cream you buy. Just in case.

  • hey guys, after microwaving the chocolate and double cream, the double cream seemed to have separated - forming a layer of buttery looking oil on top of the liquid. Is that okay or not?

  • @AlsonL77 It should be fine, since butter is extremely undense and oily, that will probably happen, just mix it up alot.

  • Since I'm a bit cheap... could I use a hershey's chocolate bar instead of some fancy chocolate? Please answer, I'm making these for Christmas!

  • @Sagecage100 milk chocolate makes it really sweet...plain/dark chocolate would be best if possible

  • @Sagecage100 i think when you add in the double cream it makes the dark chocolate taste less bitter, while if you add milk chocolate and then later add double cream it becomes too sweet, i guess that's why they use dark chocolate in chocolate cakes as well. not sure though :)

  • Just made these with rainbow nonpareils for toppings. So easy, pretty, and sooo good!

  • I made it for a bake sale(as a gluten free treat, with a toping of desicate coconut), I only used half and half cream and there was an odd olily substance the seperated during the microwaving. I'm going to make them again for anothe bake sale, this time with a toping of iceing shugar.

  • @JaclynJuice1 we used chopped pistachios, chopped toasted hazelnuts, glittered sugar strands and cocoa powder. Although you can use whatever you like... desiccated coconut s great too!

  • mine were really soft and mushy so when I tried rolling them it totally failed. I don't know where I went wrong though cause I left them in the fridge for a bit over two hours.

  • @mileyrox93 You probably used too much cream. Happend to my first batch a few years back. ^^ It also depends on the chocolate you use. The lighter the chocolate is, the higher the amount of cocoa butter, which makes it softer. For example, for 300g white chocolate I used lemon zest, 50g cream, 40g butter and 50ml limoncello. I had to use a pastry bag to form the truffles because it became such a soft and fluffy ganache. The coating process was such a mess. XD

  • Another way i've seen thats easier is to put the chocolate in a square pan and let it cool that way and when its all cooled down cut it inot bricks you won't get your hands nearly as messy, you waste less chocolate, and it still looks very nice.
