  • Another good alternative for this recipe is to use bone-in chicken thighs(which have much more flavor). Sear them on both sides, sautee the mushrooms really well, probably longer than he did so they get nice and crusty. Then before you put it in the oven, flip the chicken skin side down and then cover it with either a lid or foil. The steam that condenses in that pan will become the liquid you need to extend the juices later so you don't need to add as much afterwards.

  • Marco Pierre White's been taking the minimalist approach since the 1980s. He's a good reference for this same philosophy. We don't really need gravies that are super thick due to a roux. Butter has a strong flavor of its own and its only use in sauces is to enrich it and emulsify it, so use a few drops (literally drops) of cream instead. Cream is a neutral flavor so it stabilizes the sauce better without taking away from the main food's natural flavors.

  • I know you said to keep it simple, is it possible to render some bacon fat instead and use that? Mostly for the fact it'll be three of my partners favorite ingredients and I want to make it special for him :)

  • @xThexBlackxRavenx maybe crisp up some bacon ahead of time and then use that bacon fat (most likely need some extra oil) to pan fry your chicken in the same pan and then take the crispy bacon bits and add it to your mushroom sauce.

  • hey chef John I made this two nights ago for my family and boyfriend they all loved it! The only thing was the mushrooms were too salty but that was me not including the salt in the butter

    Q) Can you clarify the purpose of checking the internal temperature of the chicken breasts? Do they have to be at 165-170 degrees or higher?

  • @artichokeh34rts I think in that temperature the chicken stays moist and tender. The higher the temperature the dryer it gets.

  • @silver05M6 I THINK(!!!) it's because extra virgin olive oil has a quite strong peppery flavor that will overpower the flavors of the chicken and mushrooms

  • Just tried this. Only had skinless breasts, but added some cajun pepper to it with the salt, and with the oil, still had tons of flavor!!! plus, the mushrooms were awesome! You rock, thank you!

  • This works brilliantly and is delicious. Certainly something to serve guests.

  • Chef john is the best, he can do no wrong. I know this was an excercise in minimalism but if you have the option, never cook a whole chicken breast on it's own. Minimally it should be pounded to an thinner than normal, even consistency, and ideally it's best when filleted or butterflyed in 2 pieces. On their own they are just to thick, and devoid of fat to cook off the bone in 1 whole piece.

  • Really good recipe. I cooked it using 1/4 cup of white wine, and 1/4 cup of chicken stock, also added a little bit of minced garlic. It was awesome! Cheers! Perfect technique for getting the job done! Thanks!

  • Chef John, I love your recipes, but I think you tend to put way too much salt in them. Like with the trader joe's meatloaf, I used the exact same amount of salt as you did, and I ended up having to add a lot more chicken stock to make up for it.

    people usually eat chicken breasts when they're on a diet. If you want to gain weight then i suggest protein (red meat).

  • @faithoversight Actually, contrary to what most people are taught, a high protein diet can help you *lose* weight. I have awesome amounts a meat, whole eggs, butter and bacon in my diet, yet by avoiding simple carbohydrates I manage to stay in awesome shape. My cholesterol is actually below normal! :)

    Let me recommend diet (helped me gain):

    - a good breakfast shake (whole milk, 1 egg, almond butter, protein mix, vanilla, cinnamon, flax seed oil)

    - plenty of protein from meat, nuts, eggs, beans

    - NO white or liquid carbs (no white bread, juice, pop)

    - veggies at every meal

    - one cheat day a week where you basically gorge yourself on whatever you want

    - increase good carbs on workout days

  • @CraftyKoo Maybe your heat is on too high and you;re trying to turn the chicken too soon? Once the bottom sears, it should let go. Same with fish.
