Another good alternative for this recipe is to use bone-in chicken thighs(which have much more flavor). Sear them on both sides, sautee the mushrooms really well, probably longer than he did so they get nice and crusty. Then before you put it in the oven, flip the chicken skin side down and then cover it with either a lid or foil. The steam that condenses in that pan will become the liquid you need to extend the juices later so you don't need to add as much afterwards.
Marco Pierre White's been taking the minimalist approach since the 1980s. He's a good reference for this same philosophy. We don't really need gravies that are super thick due to a roux. Butter has a strong flavor of its own and its only use in sauces is to enrich it and emulsify it, so use a few drops (literally drops) of cream instead. Cream is a neutral flavor so it stabilizes the sauce better without taking away from the main food's natural flavors.
I'm so having a big man crush with you right now Chef John! i made this today for supper but I had to add chicken broth instead of water as I didn't have the fancy stainless steel pan that goes in the oven. It turned out fantastic! i haven't made chicken that actually taste like chicken in a reaally long time. Thank you so much for the recipe!
Just got done eating this.It was the BEST chicken I have ever made or tasted! I did not have a pan for the oven and I only had frozen skinless chicken breast. So I thawed the chicken, then cooked it like the video said but instead of the oven I covered the pan with a lid 5 min on both sides then removed the lid. Be sure to stir your mushrooms every few min. Then I removed the chicken and finished the shrooms with water you really don't need to add any other seasoning its super flavorful!
I know you said to keep it simple, is it possible to render some bacon fat instead and use that? Mostly for the fact it'll be three of my partners favorite ingredients and I want to make it special for him :)
@xThexBlackxRavenx maybe crisp up some bacon ahead of time and then use that bacon fat (most likely need some extra oil) to pan fry your chicken in the same pan and then take the crispy bacon bits and add it to your mushroom sauce.
hey chef John I made this two nights ago for my family and boyfriend they all loved it! The only thing was the mushrooms were too salty but that was me not including the salt in the butter
I didn't think of adding something bright and acidic but that might be something to lighten it up a bit! I'll try it next time or you can try it and let me know!!!!
I watched this video last week and decided to try it. As I was making it I kept thinking things like...maybe I'll add some garlic, or onions, or dill! But I restrained myself and you were SO RIGHT! IT WAS AWESOME!!! It is now going to be in my regular chicken rotation! Loved It!!!!
@celeffler Cool! How'd it taste like? :) I was thinking of adding some lemon juice to deglaze the juices from the pan but I wanna know it form someone who has already done it. x)
@silver05M6 I THINK(!!!) it's because extra virgin olive oil has a quite strong peppery flavor that will overpower the flavors of the chicken and mushrooms
Affordable, easy to make, and DELICIOUS! Thank you so much for keeping in mind to those who are beginners in the kitchen, like myself lol It looks AWESOME!
Just tried this. Only had skinless breasts, but added some cajun pepper to it with the salt, and with the oil, still had tons of flavor!!! plus, the mushrooms were awesome! You rock, thank you!
I don't have a stainless steel pan which can go in the oven, would transferring the chicken and the mushrooms to an oven tray or something similar be ok?
I think you should provide the specific link for this recipe in your info box, instead of providing your website address alone. Great recipe btw! Trying this out tonight! :)
Wow! I just made this and it turned out AMAZING!!! I substituted breast for thighs, but it still turned out great! Thank you so much for posting this amazing, but simple recipe!
Well done and your so right my herb garden has totally become a crutch....I cook at someone else's place and I have a slight panicky feeling lol. Great job Chef!! be blessed
Chef john is the best, he can do no wrong. I know this was an excercise in minimalism but if you have the option, never cook a whole chicken breast on it's own. Minimally it should be pounded to an thinner than normal, even consistency, and ideally it's best when filleted or butterflyed in 2 pieces. On their own they are just to thick, and devoid of fat to cook off the bone in 1 whole piece.
Really good recipe. I cooked it using 1/4 cup of white wine, and 1/4 cup of chicken stock, also added a little bit of minced garlic. It was awesome! Cheers! Perfect technique for getting the job done! Thanks!
can u show us how to grow herbs, and maintain them??? i want free parsley too,and basil, mint, corriander (cilantro),oregano, dill, chives, and any other herbs not mentioned, thanks xx
Chef John, I love your recipes, but I think you tend to put way too much salt in them. Like with the trader joe's meatloaf, I used the exact same amount of salt as you did, and I ended up having to add a lot more chicken stock to make up for it.
@alesbica The questions on here come from people who watch your videos because they are not chefs and need guidance. I don't think that other chefs need your ideas, since they have their own. I like your videos, but I didn't think you would be so arrogant.
be awesome if i didnt HATE mushrooms!! anyideas people what i could use as a replacment, obv i need something moist like the schrooms, but i dont want anything starchy, i wanna follow this as close to the letter as possible, im thinking peas, but there only going to buns and prob wouldnt saute nice at all. any ideas???????????????????????
Oh my lantis! You proved a very good point of minimalizing ingredients to bring out the natural flavor. People sometimes do overdo it and I want to thank you for reminding me of simplicity while utilizing proper technique to bring out the best in a dish.
@faithoversight Actually, contrary to what most people are taught, a high protein diet can help you *lose* weight. I have awesome amounts a meat, whole eggs, butter and bacon in my diet, yet by avoiding simple carbohydrates I manage to stay in awesome shape. My cholesterol is actually below normal! :)

Q) Can you clarify the purpose of checking the internal temperature of the chicken breasts? Do they have to be at 165-170 degrees or higher?
artichokeh34rts 5 months ago
@artichokeh34rts I think in that temperature the chicken stays moist and tender. The higher the temperature the dryer it gets.

people usually eat chicken breasts when they're on a diet. If you want to gain weight then i suggest protein (red meat).
faithoversight 11 months ago
@faithoversight Actually, contrary to what most people are taught, a high protein diet can help you *lose* weight. I have awesome amounts a meat, whole eggs, butter and bacon in my diet, yet by avoiding simple carbohydrates I manage to stay in awesome shape. My cholesterol is actually below normal! :)
batonrye 11 months ago
@anirudhkrishnamani Most people underestimate the amount of calories they consume. I know I did.
Let me recommend diet (helped me gain):
- a good breakfast shake (whole milk, 1 egg, almond butter, protein mix, vanilla, cinnamon, flax seed oil)
- plenty of protein from meat, nuts, eggs, beans
- NO white or liquid carbs (no white bread, juice, pop)
- veggies at every meal
- one cheat day a week where you basically gorge yourself on whatever you want
- increase good carbs on workout days
