If by the "woooes and aaaayysss" you mean the cheering from the crowd, then you must know that during a salsa performance it's customary to make as much noise as possible to cheer on the dancers... salsa isn't the opera or theatre.
And if by "fresh people in the salsa scene" you mean the people who are cheering, a good portion of that cheering came from dancers/instructors who have been dancing way longer than me, some having regional and world championships under their belt.
