If you don't have a mixer, don't give up. Getting stiff peaks is totally possible by hand. It just sucks.

"Peaks" refer to the shapes left on the surface when you lift the whisk gently upwards out of the eggs. You want them to hold their shape.

I think you can coddle the eggs if your scared of raw eggs. Rachel Ray had someone that made cesar dressing with coddled egss if I recall you immerse em in boiling water for 45 seconds.
@limosine yeah seemed way to thick to me. Also, not too sure about the liquor killing raw egg germs - however, I don't agree that raw eggs have germs to begin with... :)
@steesamb12345 always tastes better with hehe I would think a splash of Frangelico would be nice a Hazelnut Eggnog then again can't stand the stuff much maybe with that I'd actually drink it lol.
