If you don't have a mixer, don't give up. Getting stiff peaks is totally possible by hand. It just sucks.

Grab a whisk and whip it back and forth (as fast as you can) until you can't feel your wrist anymore. Then do it some more. After what seems like forever, the egg whites will turn opaque. Then frothy, and eventually they'll firm up.

"Peaks" refer to the shapes left on the surface when you lift the whisk gently upwards out of the eggs. You want them to hold their shape.

I think you can coddle the eggs if your scared of raw eggs. Rachel Ray had someone that made cesar dressing with coddled egss if I recall you immerse em in boiling water for 45 seconds.
