Also from the jammed punch, he can duck under the punching arm and take a rear clinch. From the rear clinch there are a few really nice, controlled takedowns that allow you to either end in the modified mount, or to take the back.
However, the defender still has good takedown options after jamming the incoming punch. For example, he can hook the punching arm, hip into his opponent, and either execute a standing hip toss, or go to his knees and bring his head to the mat (keeping the arm) which will throw/roll the attacker to the ground, from there he can take side control or even pass into a full mount.
The way to avoid getting thrown by Osoto Gari is to keep a wide, stable base. If you watch how the takedown is shown here, the attacker steps forward with the same side foot that the punch came from, which is what helps set up the throw. If the attacker had thrown a straight punch without stepping forward, keeping that leg back, this throw would not have been realistic as a response.
