Well in the official North American version of the game, it was "Aeris," so either Aerith or Aeris would be correct.

On top of many translations between English and Japanese having names changing the spelling slightly in the case of "th" at the end (Marth from Smash Bros / Fire Emblem comes to mind, in the anime they pronounced it "Mars"), and in English, particularly old English, a "th" at the end of a word would generally make an "s" sound.
