  • hey all! My first time making cider i used 5 gallons of apple juice,no preservatives,i used 4 lbs of sugar by mistake,instead of 4 cups whoops! and nottingham yeast,added some raisians after a week,it's been 2 wks and it's still fermenting,this nottingham kicks ass,i'm still waiting for it to quit bubbling.might split the 5 gal up and add more apple juice to 2 5 gal glass carboy and more yeast,if it is too sweet.

  • I thought the cider turned out pretty good alittle bit dry for my taste though...the carmel malt that you had at castle was really good though. :D

    Im looking forward to spring castle to try some more of your brews. :P

  • Very tasty! Fair warning - the Nottingham yeast finishes a little sweet at around 1.015-1.020. It's still a bit sweet if you like that sort of thing and around 5% ABV (-ish) so it's a little less potent than the recipe as-written.
