Some olive oils can be raw, actually but most shop bought ones are not... The way I see it is that foods like these are somewhat "recreational" and if you want to be totally pure then you would be choosy about your oil or not make a recipe like this.

Thought I should let you know that people have dried from eating raw commercially grown mushrooms (Agaricus bisporus)the ones you are using. While the mush. themsevlves are safe to eat the pesticides the growers use to kill fly larve, is very deadly to humans also. I don't care how much you wash them you can't remove the toxins in the celluare tissuse, only by cooking on high heat, will it disapate. The toxic mush commitee has found that many people die each year from eating these raw. Eat wild!
As far as I know pesticides are used in growing any commercial mushrooms. They have to control heat, water, soil, and pest. So any mush grown commercial couldn't really be organic. The only trully organic, would have to be gathered from the wild. There are a few species that are very safe to eat raw. Chanterelles, Winter Chanterlles, Oysters, Brants Puffballs, King Boletes, Cauliflour, Meadow mushroom, Hedgehogs. I have eaten and served these species raw in restaurants for years, no poisenings.
If you've ever had fried mushrooms you would understand that they are absolutely delicious when fried. The moisture gets locked in and they explode in your mouth with flavor.

110-115 degrees F (Cooking temp is 117/118). Enjoy - they ARE awesome!
