For big hydra, move around the platform from left to right. As he comes down to attack you, you use your magic (L2) to shock him and then you repeatedly hit X and Y again. Once he's taken enough hits, you'll see the hit "O" icon. Hit it fast and you'll launch a more calculated attack where your blades grab into him and smash his head against the center wood pole.

You will have to repeat this a few times until he finally dies.

As each hydra goes down, you rush to the top of the boxes located next to them and jump on the platform. The platform then comes down with a large blade underneath it and stabs the hydra dead.

I found that the best spot to be in when fighting the twin hydras is right in the middle between them. Then attack one of them by repeatedly hitting X and Y. Eventually, once they've taken a good amount of damage a big gust of wind will blow you towards the other hydra but that's ok nbecause it's the perfect time to attack. Repeat attack by hitting X and Y, till you get blown in the other direction again.
