Really I think the same effect can be achieved by using an egg white instead of using the powder packet form of it. Oh, and don't be afraid of salmonella by using raw eggs in a drink. If you simply buy your eggs from a mega-mart and buying pasteurized eggs they are virtually disease free. Actually the chances of buying a farm-raised egg that is contaminated with salmonella is slim to none as well. Still, cool trick
@WWOLFwts the only thing you need to take into account is the water content found in an egg white which is not in the lecithin. it probably wouldnt matter in this recipe, but it can have an effect in others especially if the ratio used to replace the lecithin is a good amount.

this looks SO COOL.. sadly I wouldn't drink it because I can't stand grapefruit and barely tolerate orange juice, but it LOOKS SO COOL!
