Tammy, have you attempted to dehydrate avocados? I know it probably sounds a bit nuts to attempt it but my hubby has a stomach problem and has to eat avocados. I would like to buy a whole bunch when it's on a great sale ($.44-$.98 each), but am afraid of it spoiling before he gets through them all. Sometimes the prices are just ridiculously high (i.e $1.98-$2.50 each), and then I won't buy any.
Interesting stuff...but, one detail, you mention hygiene, and you wear the gloves, which is fine. However, not to seem overly critical, but I would hope that when you are working in the kitchen just for yourself and not for demonstration purposes, that you wear a hairnet. I notice several times during the video that you keep pushing your hair out of the way with your gloved hands, which totally defeats the purpose of the gloves. (sorry, this is a peeve of mine. 6.5 years in restaurant biz)

If you use bananas that are a little on the green side, spray with lemon juice, use stainless steal knifes ( I like using a meat slicer so everything is cut the same thickness) you will have a crisper banana chip. Remember, the older the fruit the higher the sugar content and more pliable the food. Hope I have helped. Tammy

Help, I bought some bags for vaccum packing in. I went with the thicker ones and the carrots and sweet potatoes seem to be pocking holes in the bag and I am losing my vacuum. Do you do anything special to keep the food from being so sharp and ruining bags? I was thinking not vacuuming so tight.
@LuxAuterna My oven actually has a "drying" cycle/function (it's convection also). It uses the fan and has a magnet that props the oven door open for circulation. That is what I use. It also depends on if your oven has setting that go low enough, 100 - 125*
I'm so skiddish watching you with a knife. I'm just waiting to watch you lose a finger. the tip of the knife is suppose to be used as a fulcrum and the length for cutting plus you're cutting right onto your counter tops. Your videos are quite informative and very helpful just be careful with that knife. I would suggest watching a knife handling video on here

Hey Tammy, great videos btw. I have a question about tame blackberries. I raise about 200 quarts every summer and sell most of them by the road side and was interested in dehyrating some. Do they hold there form pretty well after rehydrated or are they all mushy? Thanks

I have been told by some of my viewers that craft stores have plastic food friendly screens. Another place is a kitchen supply stores such as Bed Bath and beyond. Make sure you do not use metal screens of any kind they can heat up and burn your food. Hope I have helped. Tammy

I think I have watched every one of your videos at least twice! You have really inspired me. I already had an Excalibur and I use it but never quite knew how to used the dehydrated food. I hope you do more cooking videos. I am an avid canner and already have tons of filled jars. Now I have to find space to store tons of dehydrated food too! I have done blackberries from a berry farm only. You want to make sure only rinse the berries right before your ready to dehydrate. Place on paper towels to get them as dry as possible, mist with lemon juice. Then throw them on the dehydrator. I would think the same would apply to the wild ones. let me know how they turn out. Yes, you can. IF they are frozen from the store just place them on the dehydrator frozen and this is the same for all other frozen vegetables and can vegetables. Tammy

Use one part boiling water to one part cut rhubarb. Pour the boiling water over the rhubarb and let it stand for about 10-15 min. Then use it in your recipe. You do not have to steam it before dehydrating. However, if you are making a puree or rollups then you should steam it first. Tammy

I purchased one of my apple peeler from Bed Bath and Beyond. It was 19.00 and it works great. The counter mount one I have was a little more money and I like that one just as much. I would say as long as they are metal and not plastic.

Tammy...I dehydrated mushrooms the other day. They were already sliced. All I did was wash them and put them on the tray, but they are all gray and black. I dehydrated on 120. Why are yours still white? I rehydrated some today when I made chilli and they looked the same. They were edible, but I want to see if I can improve anything. Any ideas?
Yes, I know what happened. When you purchased the sliced mushrooms ( like I do) they are already washed and cleaned. You never want to wash the mushrooms before dehydrating. Just take the sliced ones from the package and dump them on the tray. If they are whole then wipe off with a damp cloth and cut with a stainless steal knife. I am sorry, I need to be more detailed when I do my videos. I will keep trying to improve them. If you have any other questions, I'm here. Tammy
@homeismn Just google oxygen absorbers. Ebay, amazon, many websites have them. 100 cc for the jars. And don't expose them to air for long, put them into a jar fast. They only keep for about 6 months I believe. They are good for long term storage especially. Another way to go is the vacuum jar sealer, if you have a Food Saver. Or if you get one make sure it has that attachment (port hole and tubing). It sucks the air out of the jar.

You can use what ever works for you. In long term storage hygiene is important in maintaining the quality of the food. This is also true when canning. I think its great that your are earth friendly and more people should be. Unfortunately, I own several apartments and when some people move out it requires complete sterilization. And Clorox is my secrete weapon
Can be good up to 5-30 years or more depending what it is and if it is stored properly. Watch my next video parts (i will upload them today) to learn how to store properly

I am new at dehydrating, I put a bunch of 1/4 in banana slices in the dehydrator and after 12 hours they were like leather, any tips?? Thanks !!
