The thing that scares me about the liver of an animal is the fact that it is the organ that is responsible for filtering out all of the "bad" elements from the blood stream. Kind of makes me think of eating an air filter from a car. Also I have had a bad experience with liver pate. I know it's safe, since people have been eating it for millennia, but still. As for other innards, (I hate to say this) I have had pig rectum. It was clean, and tasteless. Reminded me of a rubber band actually.
