The Council of Ephesus decreed in 431 that Mary is Theotokos because her son Jesus is one person who is both God and man, divine and human.

The Blessed Virgin Mary gave birth to the second person of the Trinity, but she did not make him (the Second Person is not a creature and has no Maker) nor did she beget him (the Second Person is eternally begotten of the First Person). This is the orthodox position of the historical Trinitarian faith, as put forth in the Nicene Creed.
We don't believe that God has a mother. Neither do we believe that Jesus came into existence on christmas day. Rather we believe that Jesus is God the Son from all eternity. As the eternal Word He is the Creator of all things and human beings - including Mary! 2000 years ago he took on flesh. He was conceived by the power of God the Holy Spirit and was born into history of the virgin Mary. It's about God the Son truly becoming man - not about God producing a demigod through procreation.
