NO SUGAR!! The French don't add sugar to their food, it's just one of our nasty American habits. Just give it time to rise without the sugar, this isn't fast food!

It depends what kind of yeast she is using. But, yeah, it does seem like too much. I use only one teaspoon per pound of bread flour. That works for me.
