the best free screen capture program is Fast Stone Capture 5.3 , i have tried a few other programs , but in my opinion this one is hassle free & easy to use :-)

For video screen capture, I use a popular program called Camtasia. It's pricey but it works very well.

If you have a Mac, there's one called ScreenFlow that I've heard great things about.
