can someone please answer ? what would be an ideal temperature be for fermentation ?I heard that you can just leave it out in the sun. that's what I did yesterday and today I went and checked on it and it's fermentation was really good I think. so will leaving it in the sun work ?
Exposing to light increases skunky taste. Some people like that. The more sun, the more skunk. I would say dont do it. I ferment mine in absolute dark. Plus, being in the sun is going to create erratic temperatures. Keep it inside and in the dark... steady temp.

3 weeks should be plenty of time to bottle in a secondary. If you dont see any activity in your air lock it is generally good time to do it. Lagers are a different story, you can cold store them in the secondary for months (the aging will mellow it out).
As far as bottling I usually wait two weeks before I try one since you are bottle conditioning for carbonation, you need time for some carbonation to notice. If you dont like how it tastes in 2 weeks wait longer and try another bottle.
Great vid. Oxygenation and a good yeast starter are the only ways to a clean beer. 24 hrs with that yeast is good. It would be normal with a 1056 or equivelent.
I like the way you did it and used the clock. You can use this kind of video to see how high the foam will go for each recipe and temperature condiditions so that you don't overfill the container.
i have never seen this in a clear fermenter, mine is plastic, but i can see the foam, krauzen(is that spelt right?) and it once rose like 10 inches, lucky the fermenter had the head space.
it was a stout, was very nice.
now im drinking commercial stout, guinness extra stout.
