I tried these today and I found it a bit too sweet with the 2 cups of sugar so next time I will add maybe a cup and a half, or maybe a 1/2 cup of sugar and 1/3 of brown sugar. I also added chopped walnuts to the mixture too. I used the natural peanut butter the kind you have to refrigerate and that made it a bit oily so set up time increased but overall the taste is delicious and I think this recipe is great for people like me with a wheat allergy but love chocolate peanut butter cookies.

I think this is very like the "boiled cookies" recipe I collected in nursing school 30-some years ago; the ingredients are the same except for the peanut butter, I just don't remember the proportions (the original recipe is long gone). But since mine was made without PB, I'd like to mention that in case people want to try it with just chocolate.

I've never made these in the microwave. A friend of mine did though. She put the first ingredients in the microwave for 2 mins, stirred and then another 2 mins. Hi HomicidalDrizzt. Thank you for watching. I've never substituted honey for sugar in this particular recipe. Depending on how sweet you want it, I would probably try 1 1/2 to 1 3/4 cups honey. Plus, you might need to reduce the liquid in the recipe. Also, I'm not sure how the honey will react to the high heat from boiling. It would be more like a trial and error.. @MSaphrodite77 Hi! Thank you for watching. You could use 1/2 - 1 cup of chocolate chips instead of cocoa powder. You would just stir in the chips when you add the oats, peanut butter and vanilla. I've never made these in the microwave. A friend of mine did though. She put the first ingredients in the microwave for 2 mins, stirred and then another 2 mins. She said they turned out more gooey than the stove-top version. Have a beautiful day. Hugs.

Hi HomicidalDrizzt. Thank you for watching. I've never substituted honey for sugar in this particular recipe. Depending on how sweet you want it, I would probably try 1 1/2 to 1 3/4 cups honey. Plus, you might need to reduce the liquid in the recipe. Also, I'm not sure how the honey will react to the high heat from boiling. It would be more like a trial and error..
